Roasted Oven Baked Chicken with Taboule StuffingServing 4-6 

“moist on the inside, crispy on the outside”


1 (3-7 pound) whole chicken, washed and giblets removed

2 tablespoons salt

2 tablespoon black pepper

tablespoon onion powder

1/2 cup of crisco (solid-not in liquid form)

1/2 cup of dice parsley

2 Bay leaves

2 cups Chicken broth

2 Tablespoon of light brown sugar

Aluminum foil

Clear saran wrap



Side Stuffing:

2 1/2 cup Chicken stock

2 cups of Stuffing mix

3 Tablespoon margarine

1 cup Store bought taboule




Roasted Oven Baked Chicken with Taboule StuffingDirections:

Preheat oven to 350° degrees F (175 degrees C)

Mix together well – black pepper, salt, onion powder, light brown sugar, dice Parsley, and crisco in a small bowl and set aside.

Take a deep dish baking pan and add 2 cups of chicken broth to the pan, then drop the 2 Bay Leaves in broth.

Before placing whole chicken in baking pan, thoroughly rub the crisco mixture on chicken(leave some droplets on chicken-it will melt during the baking process(Do not worry about the back of the chicken)(see photo)
Take clear Saran Wrap and cover the baking dish, then cover the pan again, using the Aluminum foil with a tight seal. Place dish in the oven to bake for 1 hour. After an hour, remove both the Saran Wrap and Aluminum foil and put the chicken dish back in the oven for 25-30 minutes for browning( you should be basting the chicken with the stock/broth liquid at least 2x-twice during the 25-30 minutes, and also getting the side stuffing ready)

*When chicken is done, let it rest for 5-8 minutes before carving ( internal temperature for cooked chicken is 165°

Side Stuffing:

In a small stock pot, take 2 1/2 cups of stock/broth from the chicken dish in the oven. Bring the stock to a boil(this step should not take long because the chicken stock/broth is already hot)

When stock/broth starts to boil, turn off the stove and add margarine and stuffing to the boiling stock/broth, then add Taboule. Mix together before placing
stuffing mixture in a baking dish and baking for 8-10 minutes on 350°
